And on Sunday We Eat...Easy Stuffed Pepper Recipe


If you do not already have your meal plan for tonight's dinner, add this to the list! These stuffed peppers are a great side dish to any main course! My mom introduced me to this recipe, and I am in love. It is so simple, and has so much flavor, this will certainly become a staple in our weekly meals! Ingredients:
-3 Peppers
-2 Cups Rice
-1 Cup Peanuts
-3/4 Cup Cheddar Cheese
-3/4 Cup Feta Cheese
-1/2 Cup BBQ Sauce
-1/2 Cup Craisins
-Spinach (to garnish)

Directions:
1.  Preheat over to 350 degrees.
2. Cook rice accordingly to packaging.
3.Cut Peppers into fourths


4. Blanch cut peppers in boiling water for 3- 4 minutes.
5. Combine cooked rice, peanuts, cheddar cheese, feta cheese, BBQ sauce, and craisins together.


6. Lay out blanched peppers onto a cooking sheet.



7. Stuff peppers with mixture from above.
8. Top with cheddar cheese.


9. Bake for 30 minutes.
10.Garnish individual peppers with spinach.


11. Enjoy!
