Easy Chicken Curry over Cauliflower Rice


If you are like me, you are usually looking for a quick, healthy, and easy meal you can find to cook after a long day of work. I recently developed a love affair with cauliflower rice and am having fun trying different recipes, substituting regular rice with cauliflower rice. I made this meal last night, and it was husband approved!

The recipe only calls for 6 ingredients and takes 30 minutes max to prepare- a win, win in my book!! 
Follow the steps below, and you are sure to have an easy meal in no time!



Ingredients are:



1. Chop the chicken breasts into small cubes.

2. Saute the chicken over medium heat, until cooked throughout. 

3. Cut the stem off the cauliflower, and cut into pieces to prepare for food processor.

4. In food processor, chop cauliflower in pieces as small as rice (finished product should look as shown). Once you have chopped all pieces, add the rice to the sauteed chicken pan, heating throughout.


5. Add Coconut milk into saucepan, over medium heat (As it heats, it will liquefy).


6. Add red curry paste and fish sauce to coconut milk. You can add more or less depending on taste (I found that I had to break up the curry paste, in order for in to evenly spread throughout).

7. Add chicken and cauliflower rice to curry sauce.


8. Heat veggies accordingly to instructions. Once hot, add veggies to chicken curry mixture.Serve in bowl, and top with sesame seeds or crushed peanuts and Enjoy!
